Recently I was given a couple bags of apples from a neighbors apple tree. I shared one bag and the other is sitting on my kitchen counter.
I decided to make a coffee cake recipe out of the Best of Betty Crocker 2010 cook book
Apple Coffee Cake prep time 15 minutes, start to finish 1 hour and serves 8
Streusel topping
2/3 cup of Original Bisquick mix
2/3 cup of brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup of butter
Coffee cake
2 cups of Bisquick
2/3 cup of milk
3 TBLS of sugar
1 egg
2 medium cooking apples peeled and thinly sliced (2 cups)
Glaze
1/2 cup powdered sugar
2 to 3 tsps of milk
Heat oven to 400. Spray 9 inch square pan with cooking spray. In small bowl mix 2/3 cup of bisquick, brown sugar, cinnamon, and nutmeg. Cut in butter using pastry blender or pulling two knives through ingredients in opposite directions, until crumbly. Set aside
Stir 2 cups of bisquick mix, 2/3 cup of milk, sugar, and egg. Beat vigorously 30 seconds. Spread half of batter in pan. Arrange apples slices on batter, sprinkle with half of streusel topping. Spread remaining batter and sprinkle. Sprinkle nuts if desired.
Bake about 25 minutes or until toothpick inserted comes out clean. Cool 20 minutes. Stir glaze ingrediants until smooth enough to drizzle.Drizzle glaze over warm coffee cake
Enjoy with coffee or a cold glass of milk
This was really good and hubby and I enjoyed it for several days.
