Tonight's Soups On ... Cheese Soup .. Saving Money Eating At Home

With winter settling in, hubby and I are attempting to make a pot of soup weekly. We have made Pea soup, Creamy Cheese Potato soup and Chicken Noodle with Veggies. Not only does it warm up the house and our tummys but it can be an easy on the budget meal.

While we lived in Richmond, Texas for 15 months we would occasionally visit a restaurant called Maggie McGee's.
They had the best Broccoli Cheese Soup. I was happy just to have a bowl of that with some small crusty garlic bread they gave to you when you were seated .
The restaurant was suppose to be haunted. I was forever hoping to spot the resident ghost, but never did.

Last night I thought I would try a Cheese Soup recipe. I am not a big broccoli lover so we did not have any broccoli in the house. I decided to try a recipe in my Better Homes and Gardens cookbook. It called for carrots and celery and onions instead of the broccoli. If I put carrots in again, they will be diced even smaller than I did this time.

The soup was okay but not what I wanted. It was not any where near what I got at Maggie McGee's. I will continue to hunt for Cheese Soup recipes until I find the perfect one. The one in Texas had a slight peppery taste.

I will give you the recipe I used from the Better Homes and Gardens
Cookbook. It is a start that can be added to, until I find the recipe that I just have to have in my recipe binder.

Cheese Soup

1 cup finely chopped carrot

1 cup finely chopped celery

1/4 cup finely chopped onion

1 3/4 cups of chicken broth

2 cups of milk

1/ cup of all purpose flour

Dash paprika

1 cup of shredded American Cheese

In medium saucepan combine carrot,a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiGUz_EYehJ5zB7N6x0R6fKMXrNJORuF_P3gnY1iOPlkwsfzp2GVSShAjX8Xb5oKf3Ot2htMNJnEon4GHfh_AtUzFriNnfFEUHCSlo0oGadj0yC8ffFY3NlMDtFGoHOLZlLM2U0nh9eDLg/s1600/001.JPG">

celery and onion, add chicken broth.
Heat to boiling, reduce heat. Cover, simmer for 15 minutes or till vegetables are done.
Combine milk, flour, paprika, and dash of salt.
Have dear hubby stir milk and flour mixture into chicken broth.
Cook and stir till thickened and bubbly. Add cheese,
stirring till melted.
Makes 4 to 6 cup servings or in our house about 3 bowls. I love these bowls that I use for my soup and chili .. they belonged to my mom and dad.

Hope that you have a wonderful Tuesday as we move nearer to the big Thanksgiving Day. Please take a moment and view some of my other postings.. and I hope that you will visit again soon... Grace

Thanksgiving Stuffing Recipe Hubby's Recipe ROCKS!!

Thanksgiving Stuffing .. oh how I love my hubby's stuffing. His recipe makes me melt. Last year we were in Texas and he offered to make it and bring it to my nephew's home. Yes it passed the "Brett" ( nephew)test. He had 3 huge servings and sadly we left most at his house so I had very little left overs. This year we will eat at my stepson's home and I am hoping that he makes his father's recipe. Time will tell. Will let you know. But in the end Thanksgiving Dinner is all about family and sharing around the table.

Savory Sweet Life gives her recipe. Ours starts with her recipe and then he adds an extra bag of croutons using sage spiced croutons, 1 more Chicken broth and then 3 Jimmy Dean Sausage. And NO Egg in our recipe.
Thanks for stopping by. Grace

What's For Dinner Saving Money Eating At Home.. Enchiladas On The Menu

Hubby and I love Mexican food. Spending time in Southern California and then Texas increased that love of the taste, texture and comfort that you find in Enchiladas , Burritos and Tacos. While we were living in Texas my sister prepared Chicken and Black Bean Enchiladas for us. That desire for that wonderful taste caused hubby and I to prepare her recipe.

We do not have a 9 by 13 pan ( will be on the list now) so we used 2 casseroles to prepare in. Our Enchiladas where a little too crowded and close to the edge. They were hard to get out but oh my they were good and we had enough for 2 meals. Recipe makes 10 but I had only 6 tortillas left so we stuffed them extra full. Next time for the 2 of us I will cut the recipe in half.

Chicken and Black Bean Enchiladas

10 8" flour Tortillas
2 cups of diced chicken ( I like using a deli Rotisserie chicken)
1/2 cup of sour cream
1 4 ounce can of diced green chilies
1 16 ounce can of black beans
1 can of Enchiladas sauce
1 1/4 grated cheddar or Mexican blend cheese

Preheat oven to 350. Spoon 1/3 of Enchiladas sauce on bottom of pan.
Mix Chicken,

green chilies
black beans, sour cream
and 3/4 cup of shredded cheese.

Combine all ingrediants together. Place a generous 1/4 cup of bean mixture close to one edge of each tortillas. Roll up tightly. Place Enchiladas seam side down very close to each other on top of the sauce in pan. Spoon remaining sauce over Enchiladas.

Bake uncovered 25 minutes. Sprinkle remaining cheese on Enchiladas and bake 5 more minutes. Garnish with sour cream, guacamole if desired.

So tasty and alot cheaper than going out to dinner.. Thanks for stopping by.. Grace

Save Money On Groceries Or Throw Away Your Dollars Your Choice!!!

Today I was thinking of the many ways we can save money while at the grocery store or we may choose to let those pennies and dollars slip through our fingers. It is up to us to either shop smart or not.
I have come up with ten ways so far...
1. Make a menu plan for the week around the items you already have in the kitchen and those that are on sale at the store.
2.Sign up and USE a rewards card if your store offers them.
3.Clip Coupons and once again USE those coupons. There is many times I forget my coupons at home and need to buy that item while at the store.
4.Best to not buy items you know you will not eat even if on sale. Food thrown away because it has expired is throwing away your money.
5.Buy items when on sale... best to make a "price book " so you know what is the best price for the products you use and stock up when on sale if financially possible.
6.Stay away from the grocery store if hungry.
7.Compare unit price so that you are getting the best price per ounce. Some stores even have this information on the shelf price.
8.Buy the store brand if cheaper and it usually is.
9.Use up your left overs.. once again food thrown away is money thrown away.
10.Cut back on meat usage. An example we use in our home is to buy a three pound package of ground beef and divide into 4 meals.

Those are ten ways to save money at the store. I would love to hear of any other items you can think of .
